Quick and Easy!

Pre heat oven to 325˚

Grease and flour 8”x 9” pan

Mix in order named:

3/4 c. sugar

1/3 c. shortening

1 egg

1 ½ c. flour

½ tsp. soda

1 tsp. baking powder

½ tsp. cinnamon

½ tsp. nutmeg

½ c. chopped nuts

2 ½ to 3 c. chopped apples

Top with following before baking:

¼ c. sugar mixed with ¼ c. chopped nuts

Bake for about 30 minutes or until a toothpick inserted comes out clean.

When I was in = my early twenties, I lived on a farm in Central Oregon, just south of the Columbia R= iver Gorge. It was Fruit Country! My elderly neighbor and landlady, Onalee, took me under her wing. She taught me how to = quilt and tat, and she nurtured me in some of the farm= ways that were unfamiliar to me… like fruit. In Central Montana, we had a = few crab apples, chokecherries, and little wild plums, but that was about it. Under her tutelage, I learned about dehydrating and canning the beautiful fruit that grew there! This cake reci= pe is a quick, easy, and delicious desert to whip up… a nice way to use = up a few apples! My wood cook-stove came from that country and I first baked this cake in it.
